This is an easy to make yet super tasting probiotic drink that i prepare every time the fresh apples are in season.
Ingredients:
3 cups (24 oz) fresh Apple Juice (Must not be pasteurized)
2 tablespoons raw apple cider vinegar (Braggs is the best).
1 teaspoon cinnamon powder
5 cloves
1/2 inch ginger very thinly sliced
1 quart / liter clean glass jar
Instructions:
Add all the ingredients to a one liter glass jar and cover with lid. Make sure there is at least an inch of empty space left. Keep in a cool dark place (room temperature) away from direct light for 4-5 days. After the 3rd day, very gently shake the jar few times. On the fourth day, you might see tiny bubbles forming on the top. This shows the cider has started going into the fermentation stage (which is what we are looking for). On the 6th day, take a sip and see if the taste is good enough for you. Once satisfied, move the jar to the refrigerator and fermentation will stop. If you need a bit more kick let it ferment for few more days.
Drink it chilled not more than 4 oz at a time before meals.
Note: A word of caution, if you keep the jar out for more days, you might hear a pop due to the fizz that has developed inside the jar (hence it's important not to fill the jar to the top - to avoid spilling). Also, It is a good idea to not tighten the lid too hard. You can also try covering it with a thin piece of cloth, tied with a rubber band.
As this is a probiotic drink, having a little two -three times day will go a long way towards restoring your gut health.
Note: Keep the glass container in the refrigerator once it's ready.
