Banana-Oats Pancake

Ingredients

  • 1 cup rolled oats (or oats flour)

  • 1/2 cup plant-based milk , unsweetened and unflavored (soymilk, almond milk)

  • 1 ripe large banana

  • 2 tsp aluminum-free baking powder

  • 1 tbsp. apple cider vinegar (or lemon juice)

  • 1/2 cup unsweetened applesauce (optional)

  • 1 tsp pure vanilla extra

Instructions

  1. Place oats in a blender; cover and blend until oats are ground to a flour-like consistency. If using oats flour you can skip this step. Transfer the oats flour to a medium bowl and whisk in the baking powder.

  2. In the same blender, add banana and milk; cover and blend until smooth. Pour milk-banana mixture to the oats flour along with apple cider vinegar, applesauce and vanilla extract; stir in to combine. Allow the batter to rest for 5-7 minutes, giving the oats time to absorb liquid and thicken. If desired, you can add all the dry & wet ingredients in the blender but do not over blend.

  3. Preheat a nonstick pan over medium high heat. Once hot, spoon about ¼ cup of batter onto the pan and spread gently (if needed).

  4. Cook for 2 minutes or until you can slide a spatula underneath. Flip. Cook for another 1-2 minutes on the second side. The second batch will cook faster within a minute.

  5. Repeat until all the batter is used up. You should get 8 or 9 pancakes total.

  6. Serve warm with following toppings of choice to enjoy with the pancakes:

Sliced banana; fresh berries or any seasonal fruit compote; pure maple or date syrup.


Mixed Berries compote:


Ingredients:

  • 2 cups fresh or frozen mixed berries

  • 2 Tbsp. Chia seeds (soaked in 6 tbsp. water for 20 min)

  • 1 Tbsp. date syrup or maple syrup

  • 1 tsp pure vanilla extract

Instructions:

  1. In a medium saucepan, add berries and heat over medium-high heat, stirring occasionally

  2. When the mixture begins to bubble, reduce heat to medium-low and to cook for 10 minutes, occasionally mashing the berries and stirring to combine.

  3. Turn off the heat and add the chia seeds, date syrup and vanilla extract. Stir few times and allow the mixture to thicken and cool for 10-15 minutes.


Tips:

Serve over your favorite pancakes, waffles, oats, plant-based yogurt, or frozen banana nice cream.
