Once you make your own almond milk, you are not going with any other type of milk, I guarantee you. With so many people having issues with dairy these days, almond milk gives us a great alternate option. Furthermore, Unlike dairy, it doesn't contain saturated fat or cholesterol. You can buy almond milk from stores, but that doesn't really tastes good. Plus, it is fortified with many extra ingredients. It is far easy and healthy to make your own almond milk at home. It comes out to be a lot tastier as well.
Ingredients:
2/3 cup almonds (soaked overnight)
3 cups water
3-4 dates
1 inch vanilla bean or 1 teaspoon vanilla extract
1/4 teaspoon cinnamon (optional)
Directions:
Soaking the almond for few hours help remove tannin present in the brown skin. Tannin can hamper nutrient absorption. Almond skin also contains phytic acid which can bind to important minerals in our GUT. Make sure to throw away the water which was used to soak almonds. By throwing away the soaked water, we can essentially get rid of the phytic acid as well.
Add all the ingredients in a blender and blend on high speed till every thing is well blended. Use a nut milk bag or a cheese cloth to strain the milk.
Sweet Almond Milk:
To make it sweet tasting, you can blend in few dates (or honey) to the strained almond milk. Add vanilla extract and cinnamon for a sweet tasting smell.
Note: This almond milk can be used as a base for making any kind of healthy shakes / smoothies (banana, berries or dark chocolate) as well as on top of the cereals or oatmeal.
Quick Almond Milk: Alternatively, you can blend 1 tablespoon of high quality almond butter (preferably raw) with 12 oz water for 30 seconds to get your almond milk.
