Minty Watermelon Juice

Watermelons are one of the best fruits for cleansing and hydrating the body. When the season comes, I suggest you go crazy on all types of melons. Most people like eating watermelons and that's perfectly good. But sometimes, you might want to change how you consume this great gift from nature. Fresh Watermelon juice in summer is not only tasty, but amazingly nutritious as well especially if you use the green skin as well. Most of us just eat the inside "RED" portion of the water melon. However, did you know 90% of the nutrients are at the skin or right under the skin level (in the white portion). So if you are juicing watermelon (or any kind of melon), juice it with the skin and seeds.


Now you can really upgrade the nutrition profile of this juice by following my recipe below.


Ingredients: 

  • 1 Pound seeded watermelon with Rind - Outer Green skin (If organic or pesticide free)

  • 1/2 lime

  • 1 handful of fresh mint leaves 

  • Dash of black pepper (optional)

  • 1/4 inch ginger 

Instructions: Cut the watermelon into small parts including the watermelon rind (outer green part). Use the rind only if the watermelon is organic or pesticides free. If it is not organic or pesticides free, throw away the green rind but keep as much of the white part (right under the the rind) as it has lots of nutritional properties (even more than the red part) and hence a great addition to the juice. To make this juice, simply run the chopped watermelon parts through the juicer. Add the mint leaves followed by half lime and ginger (optional) in the juicer. Wallah, you have the sweet and spicy watermelon juice. Pour the juice in a tall glass and throw in a dash of black pepper. This juice is extremely hydrating. 

Variation: Juice half of the recommended water melon (along with rest of the ingredients). Blend this juice with the remaining half of the watermelon in a blender for a cooling water melon smoothie. This deliciously hydrating minty/spicy watermelon smoothie can also be frozen into a Popsicle for the kids to enjoy in the summer heat.

Note: Drink the juice immediately for maximum benefit. If not drinking right away, store immediately in air-tight glass container and keep in refrigerator.
