These vegan oatmeal chocolate chip cookies are very tasty and healthy as well.
Dry ingredients
1 ¼ cups gluten free rolled oats
¼ cup gluten free oat flour
2 ½ tablespoons ground flax-seed
1 teaspoon ground cinnamon
½ teaspoon ground nutmeg
1/8 teaspoon ground cloves
¼ teaspoon salt
wet ingredients
3 tablespoons melted coconut oil
¼ cup unsalted, natural almond butter
¼ cup coconuts sugar
¼ cup Pure maple syrup
1 teaspoon pure vanilla extract
Handful of vegan chocolate chips
Instructions
Preheat oven to 350°F.
In a large bowl, whisk together all of the dry ingredients.
In a separate bowl, whisk together all of the wet ingredients.
Pour the wet mixture over the dry mixture. Add the chocolate chips. Using a rubber spatula, stir and fold until well mixed.
Line a baking sheet with parchment paper. Using a scoop and drop cookie dough balls onto the baking sheet—spaced evenly apart. Using a fork, flatten cookies about halfway.
Bake for 10-15 minutes. Place baking sheet on a cooling rack, allowing the cookies to firm up for 20-30 minutes. Transfer the cookies to the cooking rack. Enjoy!
