Zesty green chutney



Ingredients

2 cups fresh cilantro, chopped

1 date, pitted and soft

2 tsp raw tamarind pulp

2 garlic cloves ( or substitute with ginger) though garlic may taste better

1/4 lemon squeeze

1 green chili, seeded (optional)

Pinch of cayenne pepper

Pinch of salt

¼ cup water, plus more as needed


Directions:

In a food processor combine all the ingredients and ¼ cup of water. Cover and process until nearly smooth, adding I tablespoon of water at a time to reach the desired consistency, and stopping to scrape sides of the processor as needed.

Notes:

You can use a blender to blend all the ingredients to get a smooth paste like consistency. I prefer coarse like texture of this chutney.
